Tasting
This is a neighbouring cask from "The Cedar Tree" and also a Bushmills, but it started its maturation in a bourbon cask and matured for the last three years in a PX sherry cask for its finish. Admittedly, a daring attempt! But the whisky is wonderfully spicy, chocolaty and "umami" on the nose. On the palate, it has wonderful notes of gingerbread and spices. A sherry-spiced Bushmills for winter with a great colour.
Nose: spicy, chocolate, umami, tropical fruit, sherry
Palate: Gingerbread, sherry, cinnamon, cardamom, liquorice
Finish: Full-bodied, spicy and long
